Directions

1. Step

Start by preheating your oven to 350°F (175°C). This is an essential step to ensuring your cake will bake evenly, so don't forget! Also, prepare two 9-inch cake tins by buttering and lightly flouring them.

2. Step

In a large mixing bowl, combine 2 cups of flour, 2 cups of sugar, ¾ cup of cocoa, 2 teaspoons of baking powder, 1½ teaspoons of baking soda, 1 teaspoon of salt, and 1 teaspoon of espresso powder. Whisk it all together thoroughly to break up any clumps.

3. Step

Add 1 cup of milk, ½ cup of oil, 2 eggs, and 2 teaspoons of vanilla to the dry mixture and mix together until well combined. Pour in the boiling water and mix well. The cake batter should be thin, but that’s okay – it's key to making our cake super moist.

4. Step

Evenly distribute the cake batter into the prepared cake tins.

5. Step

Bake for 30-35 minutes. Remember, baking times can vary as all ovens are different, so it's key to start checking at around 30 minutes. The cake is done when a toothpick or cake tester inserted in the center comes out clean.

6. Step

Remove cakes from the oven and allow to cool for about 10 minutes. Then, remove them from the pans and let them cool completely on a wire rack. This guarantees your cake won't fall apart when you frost it.

7. Step

Finally, when the cakes are cooled, frost with a generous layer of your favorite whipped cream frosting.
