Original Indian Rogan Josh curry recipe
Rogan Josh is one of the very popular Indian cuisines. This dish is usually cooked with red meat, mainly lamb or goat/mutton meat. During the cooking process, the lamb becomes very fragrant and melts in the mouth. This dish is served with rice or naan.
- 1 lb lamb or goat
- 3 tablespoon oil
- 1 teaspoon cumin seed
- 1⁄4 teaspoon Asafoetida
- 2 teaspoon Kashmiri red chilli powder
- 1 teaspoon coriander powder
- 1⁄2 teaspoon ginger powder
- 1⁄2 teaspoon Fennel powder
- 3 Black cardamom
- 5 Green cardamom
- 1 stick cinnamon
- 6 Saffron strands
- 2 Mace
- 4 cloves bay leaf
- 4 cups water
- 2 pinch saffron
In a Dutch oven put some oil and add two Black cardamon
Put the meat into the pot, and fry it, until the meat becomes brown.
Add the asafoetida, Kashmiri red chili powder, coriander powder, ginger powder, and fennel powder.
Mix all the spices well with the meat and cook for 15 minutes.
Add the water and salt to taste. Cook for 40 minutes on low heat.
Keep it frequently.
Make a fine powder of whole spices.
Add it to your pot and mix well. keep on cooking it, until the meat is very tender.
Add saffron and cook for 5 minutes.
Garnish with cilantro. Serve with your favourite naan or rice.
