- 11⁄2 cups ground almonds
- 1⁄2 Cup tapioca flour
- pinch of sea salt
- 1⁄2 teaspoon baking soda
- 1⁄2 Cup cacao powder
- 2 egg
- 1⁄4 Cup coconut oil
- 1⁄4 Cup maple syrup
- 1 teaspoon vanilla essence
- 1⁄2 Cup coconut milk
- 1 tablespoon cacao powder
- 11⁄2 cups boiling water
- 2 tablespoon maple syrup
- 1⁄2 teaspoon vanilla essence
In a large bowl mix together all the dry ingredients. Use a whisk to remove any lumps.
Add the wet ingredients and mix again until combined.
Pour the mixture into an oven-proof baking dish.
To make the sauce, mix together the boiling water, maple syrup and vanilla.
Using a sieve, dust the cacao powder over the batter, then pour the sauce over the batter using the back of a spoon.
In a pre-heated oven at 180 degrees, bake the pudding in the oven for 30-35 minutes or until the pudding is cooked through.
