1. Step
Combine the kumquats and sugar cubes in a cocktail shaker and muddle until the kumquats are broken up and the sugar is beginning to dissolve.
2. Step
Add the cachaça, lime juice, and ice and shake until the outside of the shaker is frosty, about 0 seconds. Pour everything into an Old Fashioned glass and serve.

This floral, sweet-tart drink is a refreshing way to enjoy fresh figs.
Perfect Martini
Classic, elegant, and stiff, the martini is a simple fusion of gin and dry vermouth, stirred together with ice, and strained into a chilled glass. The main variables are the proportion of gin to vermouth, and what you choose to garnish with. This recipe uses a 2-to-1 for the former, though 4-to-1, even 5-to-1, is popular. For some, washing the martini glass with dry vermouth, then dumping the vermouth in the sink before stirring straight gin with ice, is just right.
Black Metal Manhattan
CHOW’s former food editor Aida Mollenkamp turned me on to the Black Manhattan, a variation on the traditional whiskey and sweet vermouth drink made with amaro, which she first discovered at San Francisco’s Alembic. In this version, I throw back in a little of the sweet vermouth, as well as a touch of deep, dark nocino, an Italian green walnut liqueur, which gives the whole drink a smooth, nutty finish. Don’t forget, this recipe makes enough to serve you and a friend!
Almost Arnie
During his glory days, golfer Arnold Palmer drank a blend of iced tea and lemonade, a drink that became known, aptly, as the Arnold Palmer. This spiked version given to us by author and former Gramercy Tavern managing partner Nick Mautone substitutes citrus-flavored rum and limoncello, an Italian lemon liqueur, for the lemonade. What to buy: If you don’t have citrus-flavored rum, you can use unflavored light rum, add freshly squeezed lemon juice and lime juice as desired.

What to buy: Cynar is an Italian bitter apéritif made from about 13 herbs and plants, the most predominant of which is artichoke. It can be purchased at most liquor stores or online.

What to buy: Look for the ripest melons available in the produce section—the riper the melons, the less sugar you’ll have to add to the recipe.
