Amazing Simple Chocolate Birthday Cake

For the cake:

- 3 eggs
- 1 Cup milk
- 1⁄2 Cup vegetable oil
- 2 teaspoons vanilla extract
- 1 Cup boiling water

- 11⁄2 cups unsalted butter, softened
- 4 cups powdered sugar
- 3⁄4 Cup unsweetened cocoa powder
- 1⁄4 Cup milk
- 2 teaspoons vanilla extract

Directions
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed with an electric mixer for about 2 minutes until well combined.
Stir in the boiling water, a little at a time, until the batter is smooth. The batter will be thin, but don't worry.
Pour the batter evenly into the prepared cake pans. Bake in the preheated oven for approximately 30-35 minutes or until a toothpick inserted into the center comes out clean.
Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, transfer them to a wire rack to cool completely.
While the cakes are cooling, prepare the frosting. In a large bowl, cream the softened butter until smooth. Gradually add the powdered sugar and cocoa powder, beating on low speed until well combined.
Add the milk and vanilla extract to the frosting mixture. Increase the mixer speed to medium and beat until the frosting is light and fluffy.
Once the cakes are completely cooled, place one cake layer on a serving plate. Spread a generous amount of frosting on top. Carefully place the second cake layer on top and frost the sides and top with the remaining frosting.
Garnish the cake with colorful sprinkles if desired, and add any other birthday decorations.
Refrigerate the cake for at least 2 hours before serving to allow the flavors to meld together.
