Curd Pancakes

🥞 An intensely addictive recipe for pancakes that are not only healthier than the classic ones, they contain no sugar, have a high protein content, and win you over with their fluffiness and delicious taste. 🥞

1. Step

🥞 First, we prepare the eggs. We separate the whites from the yolks. Put the yolks into a bowl, add honey/any sweetener of choice, vanilla essence to them. Then we whisk the yolks.

2. Step

🥞 Sift the flour with the baking powder into the yolks. Mix everything again until we obtain a homogeneous mass.

3. Step

🥞 Then we whisk the egg whites into stiff snow. We add the snow to the yolk mass and gradually add curd cheese. If our mixture is too thin, we add some flour again, sifting it once more.

4. Step

The batter thus made is ready for heat treatment. We will need a non-stick Teflon frying pan, if possible. If you don't have a pan with a non-stick coating, use a little bit of coconut oil. If you don't have that either, just use a bit of melted butter in the pan.

5. Step

🥞 Using a large spoon, we make 'mounds' on the pan which spread into a round pancake. Let it bake on low heat for about 3 minutes. Then flip the pancake and bake on low heat for another 2 minutes. Optionally, flip the pancake more often to prevent it from burning.

6. Step

🥞 Then, we should just wipe the pan with a paper kitchen towel to get rid of any burnt parts and we can pour more batter for pancakes.

7. Step

🥞 Finished pancakes can be spread with jam, chocolate, served with fresh fruit, they are fantastic drizzled with maple syrup. If you choose a healthier version like me, spread the pancakes with protein pudding. I used vanilla protein pudding from Lidl and melted a handful of frozen blueberries with a bit of honey. The sky is the limit.
