Char siu Pork (叉烧) is a very popular dish throughout Asia. Its secret is the marinating in a good sauce, which mixes a series of ingredients that will give the pork a great variety of nuances and flavours. Learn how to prepare it with this simple recipe.

1. Step

Put the Hoisin sauce, honey, sugar, Chinese wine, soy sauce, oyster sauce, dark soy sauce, Chinese five-spice powder and white pepper in a bowl. Stir well until smooth.

2. Step

Add the pork and mix well, cover with cling film and leave in the fridge for 2 hours.

3. Step

Place the pork on a baking rack and bake in a preheated oven at 200 °C, cooking on one side for 10 minutes.

4. Step

Take it out, turn it over and, using a brush, cover it with the previously prepared sauce and put it back in the oven for a further 10 minutes. Turn the oven off and leave to rest for a further 5 minutes.

5. Step

In a frying pan put the rest of the sauce with which we have seasoned the pork and reduce it until it thickens. Set aside.

6. Step

Remove the pork from the oven and it is ready to serve, cut it into small pieces and serve with the sauce.
