Refreshing Passion Fruit Mojito Cocktail

Here's a refreshing and tangy twist on the classic Mojito – the Passion Fruit Mojito, a tropical treat vibrant with Caribbean charm.

1. Step

Begin by halving the passion fruits and scooping out the pulp into a medium bowl. I have found that using a spoon makes this process much easier. Then, squeeze in the juice of 4 limes. Remember to roll them on a hard surface before slicing to make it easier to extract their juice. Add in your sugar and stir this mixture thoroughly until the sugar dissolves.

2. Step

Next, gently bruise a generous handful of fresh mint leaves using a muddler, being careful not to crush them completely; that will retain the mint flavor without contributing bitterness. I've learned that a light touch is key in this process. Add the bruised mint leaves to the bowl.

3. Step

Pour in the rum and stir well. I always advise using a clear rum, as it influences the final color of the cocktail. Let this mixture sit for about 5 to 10 minutes to allow the flavors to mingle.

4. Step

Divide the makeshift cocktail base between four glasses filled with ice. Top up with sparkling water. This adds a fantastic fizziness without diluting the flavor.

Serve right away, garnishing with lime slices and mint leaves to add a splash of color and extra zing. There you have it- a batch of my favorite Passion Fruit Mojitos, perfect for a summer party or just a casual evening at home.
