- 1⁄2 kg fresh chillies
- 4 cloves garlic
- 30 g brown sugar
- 10 g salt
- 60 ml water
- 80 ml white vinegar
Coarsely chop the chillies, leaving the seeds. Put them in the blender together with the chopped garlic, salt, sugar and water. Blend well.
Put it in a glass container and cover it with cling film. Leave it in a cool, dark place to ferment for four or five days. Stir once a day.
When we see the bubbles from the fermentation, we pass it through a sieve to discard the seeds, put it in a saucepan, add the vinegar and put it on low heat until it is reduced by half.
Store in a glass container with a lid and enjoy.
