Homemade apple pockets with puff pastry

Who doesn't love them, crispy apple pockets with a crunchy puff pastry coating? These homemade apple pockets are an absolute highlight and one of my personal favorites. They're easier to prepare than you'd think and a real treat every time. So, roll up your sleeves and let's go!

  • 40 g sugar Added to
  • 1 TL cinnamon Added to
  • 1 yolk Added to

1. Step

To make the apple pockets with puff pastry recipe, first peel the apples, core them and cut into small cubes. If you like, you can snack, the apple cubes should not be too large.

2. Step

Mix the apple cubes with the sugar and cinnamon in a saucepan and simmer over medium heat for about 10 minutes until the apples are nice and soft and cooked through. Stir every now and then so that nothing burns.

3. Step

While the apples are simmering, roll out the puff pastry and cut it into squares of about the same size. You should not pay too much attention to perfection: the more rustic, the better. I think that's what makes homemade apple pockets so charming.

4. Step

When the apples are ready, spread them evenly on the puff pastry squares, but leave the edge free. Likewise, make sure that the filling is not too high, otherwise the pockets will burst open later during baking!

5. Step

Then fold the pockets and press the edges well. Here a fork can be very helpful to close them and at the same time create a nice pattern.

6. Step

Whisk the egg yolk with the water and brush the apple pockets with it. This gives them a beautiful golden color when baked.

7. Step

Now bake the apple pockets at 200 degrees (top/bottom heat) for about 20 minutes until golden brown.

8. Step

Dust the finished apple pockets with powdered sugar and serve preferably still warm. Delicious!
