VIDEORECIPE Grilled minced meat skewers "Cevapcici" recipe
Cevapcici grilled rolls are made with minced meat. They are a popular meat dish in south-eastern Europe and the Middle East. Follow the simple steps in this recipe for easy and delicious homemade cevapcici.
- 1 kg minced meat
- Beef or lamb fat
- 1 teaspoon baking soda
- 1 teaspoon salt
- 50 ml water
- 25 ml mineral water
- 1 teaspoon black pepper
- 2 tablespoon cream cheese
- 100 g white cheese stock
Mix the garlic in hot water. Add the mineral water and leave to cool.
Put the minced meat, beef fat and lamb fat in a bowl, add the garlic mixture, salt and pepper and knead well.
Cover and leave to stand in the refrigerator for at least 3 hours or overnight. Mix the cream cheese and white cheese together and place in a piping bag.
Remove the mince from the fridge.
Dilute the baking soda with a little water and add to the meat. Knead everything well again and shape it into cevapcici.
Make a tunnel in the meat with the help of a skewer and then inject the cheese filling.
Place the cevapcici on the grill or in a grill pan. Cook on each side.
Open the bread, drizzle some of the broth over it and place the cevapcici on top and enjoy. Serve with tzatziki.
