- 4 chicken breasts
- 1 Cup flour
- 2 eggs
- 2 cups breadcrumbs
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon pepper
- 2 tbls vegetable oil
- 4 burger buns
- 1 Cup slaw mix
- 1⁄2 Cup mayonnaise
- 1 tbl lemon juice
- 1 tbl mustard

1. Step
Start by flattening the chicken breasts using a meat mallet until they are about 1/2 inch thick.
2. Step
Season each side of the chicken breasts with salt and pepper.
3. Step
Place flour, beaten eggs, and bread crumbs each into separate shallow dishes.
4. Step
Dredge each chicken breast in flour, followed by eggs and then cover them with bread crumbs.
5. Step
Heat vegetable oil in a large frying pan over medium heat. When it's hot, add the chicken breasts and cook for 4-5 minutes on each side until golden brown they are cooked thoroughly.
6. Step
Meanwhile, mix the slaw, mayonnaise, lemon juice, and mustard together in a bowl.
7. Step
Spread the mixture evenly across the burger buns.
8. Step
Once the chicken is cooked, place each piece on a burger bun, top with some slaw and close with the other half of the bun.
9. Step
Serve immediately while the chicken schnitzel is warm and crispy.
