Flan is a dessert made with a custard, having as main ingredients whole eggs, milk and sugar, which is then refrigerated to obtain a creamy, gelatinous texture.
- 1 l milk
- 300 g sugar
- 8 egg
Put 3 tablespoons of sugar and water in a frying pan over a low heat until it turns into a dark, syrupy liquid. Coat the edges and the bottom of the flan pan with caramel.
In a bowl, crack the eggs and whisk.
Add the milk and whisk.
Add the sugar and whisk.
Pour the mixture into the flan dish and place in a pressure cooker with water.
Cook in a bain-marie for five minutes.
When the flan is set, remove it from the water and leave it to cool at room temperature or in the fridge for 5 hours.
Remove from the mould.
Serve with plenty of caramel. It can be added cream or dulce de leche.
