Simple Homemade Lemon Passion Fruit Slice
A delightful treat best enjoyed with tea, this Passion Fruit Slice combines a crunchy biscuit base with a tangy passion fruit filling. The luscious mix of sweet and sour will ensure you keep coming back for more. Easy to prepare, this dessert is perfect for any occasion.
Ingredients
For the Base:
- 1 Cup self-raising flour
- 1 Cup Desiccated Coconut
- 1⁄2 Cup semolina sugar
- 125 g melted unsalted butter
For the Filling:
- 395 g can sweetened condensed milk
- 1⁄2 Cup fresh lemon juice
- pulp from three passion fruits
For the Topping:
- 3 cups icing sugar
- pulp from two passion fruits
- 25 g melted butter
- 41⁄2 tbls water

Directions
Preheat your oven to 180°C (350°F). Line the base of a rectangular slice pan (around 28 x 18cm) with baking paper.
Combine the flour, coconut, sugar, and melted butter in a large mixing bowl. Press the mixture into the lined pan's base and bake for 15-20 minutes until lightly golden.
Whisk together the condensed milk, lemon juice and passion fruit pulp in a bowl. Pour this filling over the cooked base.
Bake for another 20-25 minutes until the filling is set. Let cool.
For the topping, sift the icing sugar into a bowl and add the passion fruit pulp and melted butter. Gradually add the water until you get the desired consistency. Spread this topping over the cooled slice.
Let the topping set before cutting into pieces.
