For the Base:

  • 1 Cup self-raising flour Added to
  • 1 Cup Desiccated Coconut Added to
  • 12 Cup semolina sugar Added to
  • 125 g melted unsalted butter Added to

For the Filling:

  • 395 g can sweetened condensed milk Added to
  • 12 Cup fresh lemon juice Added to
  • pulp from three passion fruits Added to

For the Topping:

  • 3 cups icing sugar Added to
  • pulp from two passion fruits Added to
  • 25 g melted butter Added to
  • 412 tbls water Added to

1. Step

Preheat your oven to 180°C (350°F). Line the base of a rectangular slice pan (around 28 x 18cm) with baking paper.

2. Step

Combine the flour, coconut, sugar, and melted butter in a large mixing bowl. Press the mixture into the lined pan's base and bake for 15-20 minutes until lightly golden.

3. Step

Whisk together the condensed milk, lemon juice and passion fruit pulp in a bowl. Pour this filling over the cooked base.

4. Step

Bake for another 20-25 minutes until the filling is set. Let cool.

5. Step

For the topping, sift the icing sugar into a bowl and add the passion fruit pulp and melted butter. Gradually add the water until you get the desired consistency. Spread this topping over the cooled slice.

6. Step

Let the topping set before cutting into pieces.
