- Two big Potato
- 1 Cup coconut milk
- 2 tablespoon fish sauce
- Star anise as per taste
- 3 tablespoon tamarind juice
- 3 tablespoon Palm sugar
Cut the chicken into medium-sized pieces and marinate it with different seasonings.
Cut the potatoes into cubes and set them aside.
Now, take 2 tbsp vegetable oil in a pan and add 3 tbsp curry paste. Stir it and let it cook for 2 minutes.
Then, add some water and coconut cream let it boil until bubbles form.
So now you can add marinated chicken and stir for 3-4 minutes until, From the outside, it has gone white.
For additional flavoring, you may add roasted peanut.
Add cubed slices of potatoes, star anise, cinnamon, and fish sauce for taste.
Now add coconut milk to it.
Slowly cook it until the chicken is tender.
Add palm sugar, tamarind juice, and salt when the curry starts to boil.
Let it cook on slow flame for 5 minutes until the gravy form. Now your curry is ready to eat.
Serve this along with white rice; you will love it.
