Candied apples like at the Christmas market
Candied apples are a big hit at any kind of celebration. This recipe is the result of many attempts, my desire to experiment and the desire to find the perfect balance between the sweetness of the sugar and the crunchy apple. I hope you enjoy preparing and enjoying it as much as I do.
Ingredients
- 6 small apple
- 400 g sugar
- 200 ml water
- A few drops of red food coloring (optional)
- 6 Wooden sticks
- Decoration such as sugar sprinkles, cookie crumbs

To prepare candied apples, wash and dry the apples thoroughly. Remove the stalks and insert the wooden sticks into the apples instead. Sticking the sticks in is particularly easy if you first drill a small hole with a skewer.
Place the sugar and water in a large pan and bring to the boil, stirring constantly. It is important not to stop stirring, otherwise the sugar will burn and ruin the whole recipe. Reduce the heat to moderate and simmer until you have a medium thick syrup. I personally like to use a kitchen thermometer to get the perfect consistency of syrup. The optimum temperature is around 145-150°C, which is the so-called "hard crack" stage.
Remove from the heat and add the food coloring and stir in well. This step is optional and only for those who want a specific color. I usually leave it out as I think the golden caramel color of the sugar is nice enough.
Dip the apples individually into the syrup and coat completely. Coating must be done quickly, as the syrup hardens very quickly as soon as it cools down.
Optionally decorate the coated candied apples and place on a baking tray lined with baking paper and leave to cool completely until the sugar coating hardens. Enjoy the candied apples as offered at the Christmas market!
